8 unique yusheng to toss for Chinese New Year 2020

This year, Cantonese restaurant Yàn is rolling out its signature Shunde-style yusheng, which is completely different from the usual offerings out there. The huge platter brims with a mountain of crispy vermicelli, shredded purple and yellow sweet potatoes, kailan, and pickled ginger. Framing this is a medley of vegetables, crushed peanuts, sesame seeds, and youtiao. The dish is finally crowned with gold flakes, crunchy coils of mee pok and succulent slivers of fresh yellowtail. Yàn’s festive set menus are available from now till 8 February  and the Lunar New Year a la carte menu is available from 25 January to 8 February.

To get away from the shopping mall crowds, consider celebrating the festivities over a sumptuous buffet at Azur from now to 8 February. Create your own prosperity lo hei at the Salmon Yusheng station. Or put together a Poké Bowl at the “Do-It-Yourself Poké” station whose range of ingredients include marinated raw tuna, tobikko, salmon sashimi, roasted beef as well as a selection of fresh seasonal greens. Alternatively, available for takeaway is the contemporary Celestial Crowne Yusheng ($108), which is inspired by the Hawaiian Poké bowls. The creation comes with a variety of fruits and vegetables like green mango, red radish, pickled sweet turnip, pickled beetroot, red cabbage, pickled papaya and pickled pineapple. The spiralised salad is then topped with Norwegian salmon, salmon roe, chia seeds, seaweed, citrus mango plum sauce as well as chopped almonds and charcoal dough chips for a welcome crunch.

Teochew Prosperity yusheng

Chui Huay Lim Teochew Cuisine & Zui Yu Xuan Teochew Cuisine

The Jumbo Group’s sister restaurants Chui Huay Lim Teochew Cuisine and Zui Yu Xuan Teochew Cuisine (located at Chui Huay Lim Club and Far East Square respectively) will be showcasing a special Teochew Prosperity Salmon Yu Sheng (from S$68) or Abalone Yu Sheng (from S$98). The refreshing platters come with fresh greens such as romaine lettuce, star fruit, mandarin orange zest, ginger, fresh garlic, plus a drizzling of sweet plum sauce dressing. The yusheng is available from 13 January to 9 February.

For a health spin, Como Cuisine’s Prosperity Toss Salad yusheng features an assembly of vegetables such as pickled zucchini spirals, julienned beetroot and carrot, shaved white and red cabbage, daikon and cucumber, as well as diced dragon fruit and snake gourd. These colourful ingredients are served with a lively dressing of plum sauce, hoisin sauce, honey and lemon juice, and crowned with superbly fresh Tasmanian Petuna ocean trout slices.

The yusheng is for dine-in only, and priced at S$24 per platter (for 2 persons) or S$50 per large portion (for 4 persons).

Candlenut’s Chef Malcolm Lee has crafted a Peranakan inspired Yu Sheng “Lo Hei” Platter (S$68), which teems with shredded iceberg lettuce, carrot, white and green radishes, red and white ginger strips as well as pickled cucumber, yellow and brown melon strips. The chef also adds dried orange peel, candied winter melon, golden pillow crackers, pomelo, green mango slices and arrowhead chips to this lively festive salad. To elevate the yusheng, the homemade plum dressing is bound with gula melaka and ginger flower. You can add either raw Norwegian Salmon slices for an additional S$28 or abalone for an additional S$48.  For dine-in and takeaway, but available on Chinese New Year Eve only (24 January).

If you prefer something away from the typical Chinese restaurant crowds, why not usher in the Lunar New Year in the lush surroundings of Dempsey Hill. Here you will get a healthy version of the New Year speciality – Chopsuey Lucky Lunar ‘Lo Hei’ (S$28 for half, S$48 for full).

Replacing the standard Chinese ingredients are fresh trout, kale, celeriac, sprouts, red radish, blueberries and wild rice. This is drizzled with a nicely balanced homemade dressing combining fresh calamansi, lemon juice, plum sauce, marmalade and Japanese vinegar.  Chopsuey Cafe has also curated two set menus for 4 to 6 people at S$68 per person, and 7 to 10 people at S$88 per person. Available from 13 January to 8 February.

Unagi Ichinoji’s unagi yusheng with crispy udon

For this Lunar New Year, gather your friends and enjoy a festive Japanese-style meal at the popular Unagiya Ichinoji as it launches Singapore’s first-ever unagi yusheng with crispy udon. The highlight of this special yusheng ($88) is of course the restaurant’s signature grilled unagi, glazed with a special inhouse tare whose recipe has been passed down for generations. The smoky, sweet and savoury eel comes with a host of premium ingredients such as takuan (pickled daikon), shredded cucumber, carrot,  purple cabbages, beni shoga (pickles), chuka karrage (jellyfish), ikura,  ebiko, yuzu peels, and pork floss. The platter is finally scattered with the crispy udon, made by udon specialist Udon Kamon. Head to one of the outlets to try this deliciously unusual creation  from 18 January to 8 February.

Li Bai’s salmon, sea whelk and coral clam yusheng platter

This year Li Bai at Sheraton is introducing two new renditions of yusheng: Coral Clam Yu Sheng (S$98/S$188) and Salmon Roe and Sea Whelk Yu Sheng (S$118/S$208). The former features a variety of shredded yam, sweet potato, white radish, carrot, pickled ginger and pomelo, crowned with coral clams. Or you can try the version with glistening orange salmon roe and succulent sea whelk. Both are available for dine-in and takeaway from now till 8 February.
