KETO EGGPLANT LASAGNA




👩‍🍳RECIPE:
1 eggplant
15 oz ricotta cheese
2 eggs
1 bag shredded mozzarella cheese (I used vegan Go Veggie brand)
1.5 cups marinara sauce (try to find lowest sugar content possible)
1.5 cups parmesan
1 tbsp dried oregano seasoning
1 tbsp dried basil seasoning
1 tbsp garlic
1 tbsp olive oil
2 tsp salt


INSTRUCTIONS:
1. Preheat oven 350 degrees.
2. Use olive oil to grease casserole dish.
3. Slice eggplant to desired thickness.
4. Combine ricotta, eggs, oregano, basil, garlic, and salt in a separate bowl.
5. Layer eggplant on the bottom of the casserole dish. Top eggplant with ricotta mixture, then marinara sauce, then shredded mozzarella.
6. Repeat pattern until desired or until the ingredients run out. Enjoy! •
