Simple Lamb pulao/Lamb pilau
Recipe:
1kg meat
4 cups rice
2-3 onions sliced
1/2 to1 cup oil
1 cup yogurt
1 tbs garlic paste
2-3 black cardamom
2-3 bay leaves
2-4 clove
2-3 pieces of cinnamon sticks
1tsp whole black pepper/peppercorns
1 tsp caraway seeds
1 tsp cumin powder
1tbs coriander powder
1.5 tsp red chilli powder
1 tsp black pepper powder
1 tsp ginger powder
Salt to taste
3-5 green chillies

Method:
Heat oil in the pan and fry onions until they are darker than golden brown. Then add cardamom, cinnamon sticks, cloves, black peppercorns, bay leaves, and caraway seeds. Fry for 30 seconds. Add meat along with garlic and fry properly.
Next, add salt, red chilli powder, cumin powder, coriander powder, ginger powder, black pepper powder, yogurt and green chillies. Fry meat with these spices until oil is separated. After that add 8-9 cups of water and let it cook for over an hour or until the meat is tender.
Once the meat is done add rice to it, at this stage 6 cups of water should be left. (I take 1&1/2cup water for 1 cup of rice)
Now bring to the boil and cover it with the tight-fitting lid. Turn heat lower down and cook for ten to fifteen minutes. Remove from heat and enjoy.
Serve pilau with salad, yogurt, raita or chutney.
